We usually start catching them with consistency in November all the way through March. Water temperatures play a huge role in the fishing season though, as well as bait migrations.
Just like any type of fish, they can turn on and off from day to day, but Costa Rica Sail-fishing is considered to be very consistent and you have a great shot at catching sailfish every time you head out. Some trips yield a couple of bites and other trips may yield double-digit numbers of bites.

Why are sailfish so hard to catch?
Sailfish often take a swat or two with their bill and then charge the bait. You can drop a bait back into their mouth when they charge, let them run for 5-6 seconds, and then set the hook. They often drop the bait multiple times so it can be a little tricky to hook them when they play around with it.
